When I was making the meatloaf for my husband’s 40th birthday, I wanted to make something he and I both actually liked given that we aren’t huge meatloaf fans. But…I hadn’t made meatloaf before so I was a little unsure of myself. I looked up several recipes to compare and research but I really wanted one with a cherry sauce. Several months ago I had made some meatballs with a cherry sauce and we all LOVED it. So I was hoping to find a meatloaf with a similar sauce. But meatloaf sauce and the meatballs sauce was too different to use the same way. After lots of research and still not coming up with anything I thought would be quite right, I decided to make it up. And usually I am the world’s worst at remembering to write down what I do then having a hard time duplicating it. But this time, I did and I am so glad because it turned out the best meatloaf we ever tasted and it was super moist even with reheating a couple days later! So here I am sharing it with you! I hope you enjoy!

Juicy Meatloaf in Cherry Sauce
2 pounds ground beef
2 eggs
⅔ club crackers
¾ cup shredded cheddar cheese
Salt and freshly ground pepper
1 ½ cup ketchup
½ cup brown sugar
1 ½ tsp Worcestershire sauce
1 ½ tsp white vinegar 
1 cup of cherry jam
1 tsp Onion powder (or to taste)
1 tsp Garlic powder (or to taste)
Preheat oven to 350 degrees. Line loaf pans with Pam and parchment paper. In a small bowl, mix the ingredients for the ketchup mix (ketchup, brown sugar, Worcestershire sauce, vinegar, cherry jam, onion powder and garlic powder) together and set aside. 
In a separate large bowl, mix together the ground beef, eggs, crushed crackers, shredded cheese, salt and pepper to taste, and half of the ketchup mix.
Press the meat mixture into the prepared loaf pan(s). Put the remaining half of the ketchup mix on top of the meatloaf. Bake the meatloaf for 1 ¼ hours.
